The Holidays are here and who says you can’t enjoy the holidays and still be eating healthy too! Here are a couple of nutritious recipes that will get you into the spirit!
Christmas Peppermint Mocha Smoothie
-1 cup of almond milk
-1 tbs. of caco powder
-1 tbs. of caco nibs
-2 chopped mint leaves or a dash of peppermint extract
-4-6 ice cubes
-1/2 frozen banana
-1 handful of greens
-Vanilla protein Powder (optional)
Throw in a blender and enjoy!
(Makes 3-4 servings)
-Spinach or mixed greens
-Crumbled goat cheese
-Red pomegranate seeds
-2 tbs. of extra-virgin olive oil
-1 tbs. of balsamic vinegar
-1 teaspoon of maple syrup
-Sea Salt and pepper
-Divide the spinach leaves onto small plates
-Sprinkle some pomegranate, pecans and crumbled goat cheese cheese on top.
-In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, sea salt and black pepper
-Pour dressing on top of the salad and serve
