Crustless Pumpkin Pie
Gigi & I are back at it. We really squashed planning, yes pun intended, for this festive pumpkin recipe but none the less it turned out delicious. Below are the listed ingredients & directions for this week's featured recipe.
- 1 Can Pureed Butternut Squash
- 1 Can Pureed Pumpkin
- 1/2 Cup Coconut Flour
- 1/2 Cup Erythritol
- 1-2 Scoops Vanilla Vegan Protein Powder
- 1 Egg
- 2 Generous Dashes Vanilla Extract
- As Much As You Like Pumpkin Spice
- 2-3 Tbs Unsweetened Coconut Milk
- 4 Tbs Full Fat Coconut Milk
- 1 Tbs Coconut Flour
- 1 Tbs Erythritol
- 1 Tsp Vanilla Extract
