The Holidays are upon us! Woohoo. It is about to get crazy so here are a few portable snack ideas for when you are rushing from place to place. Leave a comment below and let me know what some of your favorite portable snacks are!
Apple + Almonds
I love pairing a Granny Smith Apple with a handful of almonds or pistachios.
Roasted chickpeas are one of my all-time favorite snacks. You can purchase some delicious ones from Trader Joe’s or make your own!
- 1 can of chickpeas
- 1 tbs. of extra-virgin olive oil
- Dash of sea salt
- Dash of cayenne pepper
Heat oven to 450 degrees and line a baking sheet with aluminum. Mix chickpeas, extra-virgin olive oil, sea salt & cayenne pepper together & then place on baking sheet and pop in the oven. Let them cook for 15 minutes and then remove sheets and move the chickpeas around. Put back in the oven and let cook for another 15 minutes. Remove and let them cool to room temperature. Placing in an airtight container will keep them for about a week or two.
Veggies & Hummus in a Mason Jar
Chop up veggies horizontal so they form sticks. Some veggies that work the best are celery, carrots, bell peppers, jicama & cucumber. I also like to mix in some baby tomatoes too. Place hummus at the bottom of the mason jar and stick in the veggie sticks or place the baby tomatoes on top.
Almond Butter Cinnamon Rice Cakes
Smooth almond butter onto cinnamon rice cakes, package up and take with you.
